Zucchini Muffins



My version of zucchini muffins:

1 2/3 C flour
1 tsp baking powder 
1 tsp baking soda
1 tsp ground cinnamon 
1/2 tsp salt
1/2 C old fashioned oats
1/4 C ground flax seed (I pretty much add this to anything I bake )
1/2 C craisins
Mix dry ingredients, set aside.

1 egg
1/2 syrup (I used homemade I had left from breakfast)
3/4 C plain Greek yogurt
1/4 C melted coconut oil
1 tsp vanilla extract
1 1/2 C grated zucchini
Mix then add to dry ingredients and mix until combined.

Bake at 350 for 16-18 minutes. (This made me 24 muffins)

I want to try honey next time, instead of the syrup.
Aaaaaaand the boys ate all of them!
